Summary of Position:
A Sous Chef is a departmental manager, a working sous and the Chef's assistant; a person selected for his organizational and managerial abilities as well as culinary skills.
A Sous Chef creates and demands great food. A Sous Chef possesses superior technical culinary skills, maintains the highest food standards, and contributes creative input toward menu development.
A Sous Chef directs the kitchen and works in close cooperation with the General Manager and other management personnel.
A Sous Chef possesses excellent human relations and management skills relating to training, team building, organizing, and directing the kitchen staff in the operation of the restaurant.
The Chef is directly responsible to order and purchase food supplies and all things related to the physical plant, and equipment in the kitchen. The Sous Chef will work closely with the Chef, with respect to these responsibilities.
